Grilled Eggplant with Fresh Tomato Salad Recipe

Ingredients

4 medium eggplants, lengthwise cut

2 tbsp + 1 ½ tbsp olive oil

½ tsp cayenne pepper

½ tsp coriander powder

¾ cup cherry tomatoes halved

2 small red hot chiles, finely chopped

2 tbsp fresh mint leaves, chopped

1 tbsp. red wine vinegar

1 tbsp. lemon juice

1 tbsp milk

2 tbsp Greek yogurt

Preparation

  1. Wash and dry the eggplants. Remove the crown and cut them lengthwise. Make sure the thickness is ½ inch.
  2. In a bowl, add olive oil, coriander powder, cayenne pepper and a pinch of salt.
  3. Mix well and brush this mixture on eggplant slices on both sides.
  4. Place the eggplant pieces in a WEESTA Air Fryer Toaster Oven and select grill.
  5. Grill it for about 12 minutes until they get a nice colour and are tender.
  6. Once done, remove from the Air Fryer Toaster Oven and set aside to cool down.
  7. Meanwhile, add chopped mint, chopped chiles, red wine vinegar, lemon juice, 1 ½ tbsp oil, and salt in a medium bowl. Mix well.
  8. Next, add halved tomatoes and toss until everything is well combined.
  9. In a small bowl, add milk and yogurt. Mix well.
  10. Place the eggplants in a platter, add tomato mixture on top, and drizzle the yoghurt and milk mixture on top.
  11. Garnish with chopped mint leaves and serve.
